Food today was pretty good except I forgot breakfast. Its hard because of my Thryoid medication I can't eat until 1 hour after I take it and I tend to remember around 8... then I start work at 9 and can't break until 11 - So I had a lunch/breakfast combo at 11:45 - It was gonna be my pita pockets... but ooops -> I left the pitas at home. So I went to the Japaneese place and got a California Roll and Miso Soup. I was wondering all day where California Rolls fall in the Healthy / un healthy ... I figured healthy -> I just looked it up and they are approx 33 calories for per roll and there are usually 8 pieces. http://www.livestrong.com/thedailyplate/nutrition-calories/food/generic/california-rolls-sushi/ this place gave a pretty good list of suggestions for healthier alternatives, not that the count was too high for the CA Rolls -> but some of those items sound good too. I snacked on Raisins and Kale Chips in the afternoon and had a Turkey Burger (on whole wheat bun), fresh corn with fruit for dinner. I did go to Vons and buy a whole bunch of Pirate Booty and Rice Cake snacks... I was hungry and everything looked good... I almost bought a box of Lemon Cookies -> but a box in the house is a box in my belly... I did buy Dreyers Low Fat Ice Cream bars - they are only 160 calories per bar and 2 grams of fat... I am dying for chocolate and will cave soon...I am sure... everyone deserves a treat :-). So now I have something in the freezer for that emergancy... Tonight dessert will be a few pecans when I get up stairs :-) Yum Yum.
The Kale Chips I listed above: They are DELISH- Buy Kale at your local store and wash the bunch. Next Cut/Tear the leafs off the main stalk and lay on a paper towel and pat dry. Put the leafs (they should be about an inch long after you removed them from the main stalk) on a sheet right next to each other (1 cookie sheet should do 1 bunch) and drizzle about 1 tsp of Olive Oil over the top...next a few dashes of pepper and then a light amount of Sea Salt (or Kosher Salt, or regular table salt)... be very sparing with the salt -> too much and it will taste like seaweed. Use your hands and make sure all leafs have a light coating. Put the cookie sheet in the oven at 350 degrees for 20-25 minutes - check after about 15 and kind of turn them - bake until most of the leaves are brown... should be crunch. Ready to serve. I prefer them warm and will reheat them in the oven under the broiler for 3 minutes once they have cooled. A co worker is bringing me some other items to try with this receipe so I will let you know if we find a better one :-)
